Stroganoff

1 lb ground beef
1 onion chopped
10 3/4 oz can cream of mushroom
1 cup sour cream
1 cup beef broth
1/2 cup water
3 cup wide egg noodles (uncooked)

In large skillet, brown meat and onion over medium heat.
Gradually blend in remaining ingredients.
Bring to a boil.
Reduce Heat.
Cover and Simmer for 10 minutes or until noodles are tender.

Meatloaf

2 lbs ground beef
1 onion diced
10 saltines
1 egg
1 1/2 cup ketchup
1 T vinegar
1 T brown sugar packed

In a large mixing bowl, combine ground beef, onion, crackers and eggs.
Add 1 cup ketchup.
Once all is moistened, form a loaf shape and place into a 9x9 greased baking dish.
Blend remaining ketchup, vinegar, and brown sugar until sugar dissolves.
Pour ketchup mixture on top of loaf.
Bake uncovered at 375 degrees for 30 minutes

Enchilada Casserole

1 can cream of chicken
1 can cream of mushroom
1 can enchilada sauce
1/2 can diced green chilies
1/2 can water
1 lb hamburger

brown hamburger with salt, pepper and garlic

in a pot mix soups, sauce, chilies and water and cooked hamburger and cook like spaghetti sauce

layer in pan sauce, tortillas, sauce, tortillas, etc

bake at 30 minutes at 325 degrees

cover with cheese last five minutes of baking

Chili

1 lb ground beef
1 can Bush's chili beans in a mild chili sauce
1 can diced tomatoes
1 can Rotel tomatoes
1 pkg McCormick chili seasoning
1 cup water
onion powder
garlic powder

brown ground beef and drain
then dump in all the other ingredients
let simmer about 1/2 hour to let everything take on seasoning

It's not mom's chili, but it was oh so good!
