Pizza Casserole

4 jars (14 oz each) pizza sauce
1 1/2 lbs ground beef, cooked and drained
1 lb sausage, cooked and drained
1 lb rotini pasta, cooked and drained
2 cups (8 oz) shredded mozzarella cheese
2 cups freshly grated Parmesan cheese
2 packages (3 oz each) sliced pepperoni
1/2 cup finely chopped onion
1/2 cup finely chopped green bell pepper
1 clove garlic, minced

Combine everything in Crock Pot. Cover;
cook on Low for 4 hours or High for 2 hours.
6 servings

Crock Pot Chicken

4 to 6 boneless skinless breasts or 1 cut-up whole chicken (3 lbs)
1 jar (26 oz) pasta sauce
1 medium onion, sliced
1 medium green bell pepper, cut into strips
4 cloves garlic, minced
1/2 teaspoon salt
2 tablespoons to 1/4 cup water, divided
1 to 2 tablespoons cornstarch

Combine all ingredients (except water and cornstarch) in crock pot.
Cover; cook on Low 6 to 8 hours.
Before serving combine 2 tablespoons water and 1 tablespoon cornstarch in small bowl and stir until smooth.
Add to slow cooker and cook 15 minutes on High or until mixture thickens.
If mixture needs additional thickening, add remaining water and cornstarch.
Serve chicken and veggies over mashed potatoes (or noodles) if desired.

Makes 4-6 servings

Macaroni and Cheese

5 cups cooked rotini pasta
2 cups (8 oz) cubed American Cheese
1 can (12 oz) evaporated milk
1 cup (4 oz) shredded sharp cheddar cheese
1 can (4 oz) diced green chilies, drained
2 teaspoons chili powder
1 lb Ground Beef
Onion and Bell Pepper


Combine all ingredients, mix.
Cover; cook on High for 2 hours. Stir twice.

4 servings

***UPDATE*** It didn't turn out so hot - probably won't make this one again!!

Chicken Taco Soup

1 20 oz green enchilada sauce
6 boneless skinless chicken breast
1 16 oz salsa
1 large can chicken broth
1 small can green chilies (optional)
1 can pinto beans
1 can black beans
1 can kidney beans
1 can corn
1 1/2 cup minute rice
3 tablespoon lime juice
chopped cilantro (to taste, I like alot!)

Put first 5 ingredients in crock pot on low for 8 hours.
Remove chicken so you can shred it, then add it back with the rest of the stuff to cook 10-15 mins or until heated through.

Then you can eat over tortilla chips and sprinkle cheese over it or just put it in a bowl and enjoy!
I don't follow the recipe every time. Sometimes I put onions or a can of dice tomatoes. I love it! Hope you enjoy!
